When life gives you lemons... make some pie! :)
This lemon meringue pie is the perfect low carb treat with only 2.2 grams of net carbs per slice!
Macros for entire recipe:
12 gm fat
107 gm protein
17.3 gm net carbs
Macros per serving/slice (makes 8 slices):
1.5 gm fat
13.4 gm protein
2.2 gm carbs

Low Carb Desserts
2/3 cup lemon juice
2 large eggs
1.5 tsp Xanthan Gum powder
2 tbsp lemon zest
1/4 oz water
3/4 cup egg whites
Swerve Confectioners Sweetner
1/2 tsp cream of tarter
Make Doughtein via the Doughtein recipe
Line pie plate with parchment, fill with doughtein as the crust
Bake at 350F for ~10 min
Take out of oven and let cool
Mix two eggs in a bowl and leave to come to room temperature
Zest lemons to get about 1-2 tbps, set aside
Juice 4-6 lemons. you need 2/3 cup juice
Add juice + 140g erythritol to pot on stove over med-low heat, wisking until mixed. add in zest and continue mixing.
Remove from heat, slowly add in mixed eggs, whisking as adding.
Once smooth add in xanthan gum.
Mix Ketogenics unflavored protein powder in 1/4 cup water with a bit of curd until smooth. add to curd mixture on stove. continue whisking until smooth and thick
Remove from heat.
Beat egg whites, cream of tartar to stiff peaks. once done, add in 1/4 cup confectioners swerve until well blended.
Add lemon curd to crust
Add meringue to pie, going to edges and making peaked with spoon
Bake at 350F for 20-25 min on bottom shelf of oven. use tinfoil hat at end if browsing too much.
Cool for 30 min before eating; store in fridhe
Carbs 2.2 grams, Fat 1.5 grams, Protein 13.4 grams
