Each cupcake has: 97.5gm calories 12.4gm protein 2.4gm fat 3.8gm net carbs (1.7gm fiber)
Cupcakes: 170g 0% Greek yogurt 1/3 cup cashew milk (can use almond or low carb milk) 2 large eggs, separated 84g Truvia or other sweetener 1 Scoop of Ketogenics Blueberry Muffin Iso-Whey Protein 1 tsp vanilla extract 1/2 tsp lemon rind 35g coconut flour 1 tsp baking powder 1/2 tsp salt 36 blueberries
Beat egg whites to stiff peaks and set aside. Mix all other ingredients together and fold in egg whites. Pour into 9 muffin tins, lined with parchment paper liners. Sink 3 blueberries into each muffin. Keep the other blueberries for garnish. Bake at 350F until set, about 15 minutes. Cool completely before frosting. Top with one blueberry.
Frosting: 1 Scoop Ketogenics Zero Carb Unicorn Vanilla Milkshakeprotein powder 250g 0% Greek Yogurt (or Two Good vanilla flavor yogurt works nicely here) 1/2 tsp lemon rind Water to thin if needed. *Can add preferred sweetener if need to offset the taste of plain Greek yogurt.
