Dry
1 ¼ cups fine almond flour
¼ cup unsweetened cocoa powder
2 scoops KetoShop ISO-WHEY (Chocolate Cereal Milk is amazing here, or use Unflavored)
2–4 tbsp granulated monk fruit/erythritol (optional—see sweetness note below)
2 tsp baking powder
¼ tsp baking soda
¼ tsp salt
Wet
3 large eggs
¼ cup avocado oil (or light olive oil)
¾ cup unsweetened almond milk (start with ¾; see batter note)
2 tsp vanilla extract
1 tsp apple cider vinegar (or white vinegar)
Optional (Recommended)
2–3 tbsp brewed coffee (deepens chocolate flavor)
Frosting
¾ cup plain Greek yogurt (or coconut yogurt)
1 tbsp cocoa powder
½ scoop ISO-WHEY (Chocolate flavor works great)
Sweetener to taste (optional)
Mix all ingredients together until completely blended.
Preheat & Prep
Preheat oven to 325°F.
Line an 8-inch round pan with parchment on the bottom; lightly grease sides.
Mix Dry
In a large bowl whisk: almond flour, cocoa, ISO-WHEY, sweetener (if using), baking powder, baking soda, salt.
Mix Wet
Add eggs, oil, almond milk, vanilla, vinegar (and coffee if using).
Whisk until smooth.
Check Batter
Let batter sit 2 minutes (whey thickens as it hydrates).
Batter should be like a thick pourable cake batter.
If it’s very thick, whisk in 1–2 tbsp more almond milk.
Bake
Pour into pan, smooth top.
Bake 25–32 minutes.
Done when a toothpick comes out with moist crumbs (not wet batter).
Frosting
Spread frosting mix on top. Chill 15 minutes to firm up.
Cool
Cool 10 minutes in pan, then transfer to rack.
Slice after fully cooled (texture improves as it sets).
