Tired of all those weird, eggy odd texture low carb "breads" - well after tons of attempts and many years, this recipe is without a doubt the "World's Best Low Carb Bread Recipe" :) Per slice: 97 calories 2.6g of fat and 13g protein!
1 cup Warm water
1 tbsp Active dry baking yeast (rapid, bread maker, normal)
1 tsp Honey
2 eggs beaten (room
temperature is best)
60gm Oat fiber
86gm Defatted flax
meal (or 43g defatted and 43g full fat)
150gm Wheat gluten
2.5gm Xanthan gum
1 tsp Salt
30gm Erythritol (or other sweetener of your choice)
Add warm water to vessel (bread maker pan or stand mixer)
Add yeast and honey. Wait 7 minutes to ensure mixture bubbles. If it does not then yeast is not good. Get new yeast and start again.
Add the remaining ingredients in the order noted above.
Follow directions below per method.

Set bread maker and take out when complete

Set bread maker to dough setting. Once complete remove, add some wheat gluten to a flat surface, shape dough into loaf, lightly grease loaf pan, add dough, cover with saran wrap or towel and let rise in a warm location for 1-3 hours. Once complete, remove cover, and bake in 350F preheated oven for 30 min.
Stand Mixer Directions
Using dough hook, run stand mixer for 6 minutes. Once complete, remove, add some wheat gluten to a flat surface, shape dough into loaf, lightly grease loaf pan, add dough, cover with saran wrap or towel and let rise in a warm location for 30 min to 1 hour. Note: I turned the warming element on lowest setting on my stove and put the loaf pan on it. Alternately you can heat your oven to 110F, turn it off and add bread to rise .Once complete, remove cover, and bake in 350F preheated oven for 30 min.
