If you aren't a fan hard and crunchy oatmeal cookies, then these bad boys are perfect for you. Made without any oatmeal, these healthy low-carb moist and chewy banana are absolutely delicious! This easy recipe makes super chewy cookies with only 49 calories and 2gms of carbs per cookie. You must try this low fat, low carb and keto friendly recipe!
This recipe uses lupin flakes as the oatmeal replacement. Lupin flakes are the dried seeds of lupin flowers, the flakes are similar to couscous but have 90% less carbohydrate than couscous and are gluten-free! Lupin is high in protein and fiber and low in fat and carbs. Each 40gm serving of lupin flakes contains 15gms of fiber (just 2g net carbs), 2.5gms fat and 16gms of protein.
120g Lupin Flakes
1/2 tsp salt
1 tsp baking soda
1 tsp Vanilla extract
1 1/2 tsp cinnamon
2 Tbsp liquid Egg whites
4 Tbsp Sugar Free Maple syrup
100 g Mashed Banana (about 6”)
Mix all dry ingredients in a large bowl, add wet ingredients and mix well with a whisk. Scoop onto parchment lined cookie sheet with a small ice cream scoop.
Bake at 350F for about 10 minutes. Let cool completely before removing from sheet.
