Looking for a low carb protein rich treat to satisfy your fall/seasonal candy cravings? Ditch the Halloween candy for this guilt-free pumpkin spice protein fudge! With only 60 calories, 6gms protein and 2gms net carbs, this tasty recipe is definitely not a trick but a yummy satisfying treat!
1 cup Ketogenics IsoWhey Pumpkin Spice Glazed Donut protein powder
⅓ cup peanut butter (or almond butter)
½ cup pumpkin puree
6 tablespoons Erythritol sugar substitute (75gms)
6 tablespoons coconut flour
1 tsp pumpkin pie spice
1/2 teaspoon vanilla extract
¼ cup unsweetened almond milk
In a small bow mix together all ingredients until smooth. Mixture should be thick and sticky (can also use a food processor)
Using a rubber spatula, spread into a small pan (lined with parchment paper). 8x8 or 9x9 glass dish works well.
Place in the freezer for approx 1 hour.
Remove, let sit for 5-8 minutes then cut into 16 squares.
Can substitute other flavors of protein powder if you dont have access to pumpkin spice flavored protein powder. Vanilla and peanut butter protein powder go very well with this recipe
