This super delicious keto friendly Lupin Protein Bars recipe is perfect for anyone looking for a super healthy high protein, high fiber and convenient snack. These highly nutritious bars have only 3.2g net carbs per bar and are perfect to snack on and keep you fuller for longer than traditional store bought bars.
Makes 12 bars.

What are Lupin Flakes!? Lupin Flakes, made from dried seeds of the lupin flower are a very versatile ingredient for gluten-free, vegan & low-carb cooking. Lupin is great to make a low carb hummus that will taste the same as chickpea hummus as well as great to make granola, oats, rice substitute, couscous, orzo pasta, lentils, quinoa, and more! It is very versatile! The carb count is around 91% fiber so its super keto/low carb friendly.
140gm Lupin Flakes
1 tsp Lemon extract
10gm Flour Replacement (Ketogenics recipe)
1/4 tsp salt
30gm finely chopped Craisins (dried cranberries)
20gm egg whites
3/4 (170cgm) cup Cashew milk (or similar milk replacement)
Water or lemon juice to thin
1 tsp lemon extract
Mix all dry ingredients together, then add liquids and mix well. Fold in cranberries.
Press into a 9x9” parchment lined pan.
Bake at 350F for about 25 minutes or until edges are lightly browned.
Glaze when cooled.
