Check out this easy and delicious low carb & keto peanut butter thumbprint cookies. Plant-based protein powder was used in this recipe for the amazing taste and texture it gives the cookies. You will be amazed at the taste and great macros, with only 2.2gms net carbs and 51 calories per cookie!
1 scoop/36.7gms Ketogenics IsoPlant Peanut Butter Cookie Protein
1 large egg
1tsp vanilla extract
56gm coconut flour
1/2 cup cashew milk (or your favoritre milk or milk replacement)
2.5 psyllium powder
1/4 cup Diet Coke (or any carbonated beverage will do)
83gms of low carb strawberry jam
Mix all ingredients, make 10 even size balls of dough and place and flatten.
Bake at 350F degrees, remove from oven, let cool for 5 minutes.
Make indentations in centers by pressing with your thumb or with the handle end of a wooden spoon, fill with jam.
