These Pumpkin Spice Cinnamon rolls are the perfect fall treat! But lets be honest, every season is pumpkin spice season! This low carb, high protein treat will knock your socks off. With only 120 calories per roll and a whopping 19gms of protein, eat as a tasty treat or devour the whole recipe as a high protein and keto friendly meal :)
45g Ketogenics homemade flour replacement or substitute with Oat Fiber
30g coconut flour
2 tsp (9g) baking powder
½ tsp salt
90g pure Pumpkin puree
85g 0% Greek Yogurt
Just enough water to moisten dough (1-2 Tbsp)
2 Tbsp Sugar Free Maple Syrup
2 Tbsp Stevia or Erythritol Sweetener
1 1/2 Tbsp ground Cinnamon
1 1/2 scoop Ketogenics Iso Whey Pumpkin Spice Glazed Donut Protein Powder & Water to thin
Whisk all dry ingredients well in a large bowl. Add wet ingredients and knead into a ball of stiff dough. It should be sticky but rollable. Let rest for about 10 minutes.
Roll dough into a rectangle 11”x 15” between 2 pieces of parchment paper. Spread filling on dough and roll carefully, using a wet knife to help the edges lift from paper. Cut into 8 pieces or more if desired (wet knife helps).
Put into a pan lined with parchment paper at bottom, or muffin tins.
Bake at 350F for about 20-25 minutes until set.
