Once again we found another use for the ridiculous brownies recipe and transformed the recipe into the perfect peanut butter cookie! These super tasty low carb peanut butter cookies are so flavorful and chewy. They are soft, thick, fluffy and will easily melt in your mouth. Unlike hard and crunchy traditional peanut butter cookies that really are not "milk dipping friendly", these chewy cookies will soak that low carb milk/almond milk right up!
These peanut butter Cookies have crispy edges and are soft and chewy in the middle. You will never know they are only 29 calories each!
Makes 22 cookies. Macros for each cookie:
1g Net Carbs
36g Ketogenics Iso Whey Peanut Butter Cookie Protein Powder
22g Ketogenics Keto Friendly Flour replacement (can also use oat fiber)
6 Tbsp (44g) Coconut flour
1/3 to 1/2 cup (75g) Swerve or erythritol
5 Tbsp (50g) Peanut Butter Powder (or peanut flour)
1/2 tsp salt
1 tsp (10g) baking powder
1 cup (250ml) diet Ginger Ale (or any carbonated drink or soda)
4 Tbsp (50g) liquid egg whites
Mix all dry ingredients in a large bowl, add wet ingredients and mix well with a whisk.
Scoop onto parchment lined cookie sheet with a small ice cream scoop.
Bake at 375F for about 15-20 minutes. Let cool completely before removing from sheet.
